University of Chester becomes Allergen Accredited
Whites Dining at the University of Chester serves up to 800 students daily.
The range of foods offered are vast and prepared to a high culinary standard.
The team caters for vegan, vegetarian, gluten free, Halal and operates over 7 days a week with three meals per day.
As well as operating to a high food safety standard Whites Dining is an accredited restaurant with Coeliac UK.
During the audit undertaken by Jacqui McPeake- Allergen Accreditations’ Senior Allergen Advisor, it became evident that the whole catering team took on responsibility beyond the kitchen (As coined by Darren the Commercial Head Chef) in terms of the wider community of students and faculty- especially for those living away from home!
(Incidentally Darren-pictured above- has an allergy to fish and explained the difficulties he regularly experiences when preparing and cooking fish dishes!)
Indeed numerous reports were provided by Paula, who overseas operations, on inviting students in to the kitchens, dealings with nutritionists and dietitians and those studying the same at the University and exploring and delivering fine vegan cuisine during their Vegan Fest’.
Lesley Barnes co-ordinated the Allergen Accreditation process and proudly showed us around the kitchen areas- It was obvious from her professionalism and very well organised kitchen that the University of Chester is in very capable hands when it comes to student, staff and visitor catering!
Allergen Accreditation will continue involvement with the University especially for fresher’s weeks when Jacqui will be on hand to ensure support is there for new students with allergies.
Audit highlights included clearly marked fryers for POTATO and FISH, separate preparation areas to avoid cross contamination, decanted foods clearly labelled with allergenic ingredients, (daily) updated allergen information and ample signage prompting customers to ASK about allergens.
