The Allergen Accreditation audit comprised of observing operations at their central production kitchen as well as in the "field" at one of their events.

HACCP is at the heart of all processes and procedures. Customers pre-order with dietary requirements discussed and planned in advance.
All special diet needs are transposed onto their EVENT FUNCTION SHEET which are then widely distributed to front line teams prior to service.
Cross contamination controls, labelling for stores as well as end products was outstanding as was the kitchen team culture of food and allergen safety.
Ashley was able to demonstrate and explain the day to day operation and controls in place. What was most obvious was his equal passion for allergen safety as well as fine cuisine.
The whole kitchen team and support crew had undergone an allergen workshop prior to the audit. This ensures that everyone in the business has the best interests of clients in mind.
