Commercial Allergen Management for Food Service
Confidential Food Hypersensitivity Systems Review
A quick turnaround exercise where we begin with open discussions on how you manage allergens in the business.
This will involve initial contact with key personnel and a scheduled visit to the business venue. This is conducted by one of our Senior Allergen Advisors and you will be presented with a detailed report that clearly states: Your current level of EU/UK compliance, how this compares to the current regulations and Industry Best Practice standards. It will also be accompanied by any supporting links and resources that may be needed, as well as any bespoke responses to discussions and general advice.
The format will be based entirely around the Allergen Accreditation framework and will enable your business to: rectify any noncompliance; meet EU and UK standards and explore an aspiration checklist that would elevate the business to the Accreditation Standard, should this be something the business wishes to then pursue.
(Food Hypersensitivity: Allergies, intolerances and coeliac disease)
Allergen Accreditation
To gain full Allergen Accreditation status an organisation will be required to undertake the submission of the framework/ application form. This is then desktop reviewed and followed up with a physical audit to verify all components of the Accreditation have been verified. Support and guidance to attain Accreditation is supplied throughout. Accreditation runs for three years when it becomes renewable. Business can select annual audits either remotely or on site for continued validation.
Business can select either the full Allergen Accreditation scheme at the onset, or phase this over a series of bronze, silver and gold levels:
Bronze/ Entry Level (Self Assessed)
An entry level to Accreditation can be achieved by the completion of the accreditation framework, with access to all resources online.
This achieves the following aims:
- The business is working towards and is aware of the industry best practice standard.
- Is a precursor to full accreditation.
Silver/ Desktop Reviewed (by Allergen Accreditation Trained Staff)
Once you have completed the Accreditation framework this is then formally reviewed by one of the Allergen Accreditation team.
We will request that you supply us with your completed paperwork and attach evidence of your customer facing allergen information (Example matrix, label etc).
We then review this and come back to you with any queries and recommendations. Once reviewed we will advise you of any corrective actions required.
In the event the desk top review fails the business: Organisations can apply again by arrangement. A supplement may apply to this.
This achieves the following aims:
- The business has had its written systems verified and is working towards, and is aware, of the industry best practice standard.
- Independent verification of written paperwork
- Is a precursor to full accreditation.
Full Allergen Accreditation: Gold (Physical Audit)
We will assist with any corrective actions and offer guidance. This will be in advance of a pre-arranged audit.
The audit covers back door to front of house and entails observing operations and customer engagement.
Allowing you attain all attributes of the Gold Standard you will be able to promote being Allergen Accredited and be listed on the official website for customers to look you up. (As well as receiving a certificate and window decal)
In the event the audit review fails, the business: Organisations can apply again by arrangement. A supplement may apply to this.
This achieves the following aims:
- The business has had its written and operational systems verified and is operating to the industry best practice standard.
Primary Allergen Authority Scheme (PAAS)- (For groups of any size)
PAAS is designed to instil an Allergen Culture in your business.
This approach enables organisations with multiple sites to take full advantage of a centralised control system in order to roll out and continuously monitor its safe food allergen management across its business base.

Under Allergen Accreditation's supervision you will be able to accredit your venues by ensuring the venue team are fully bought in, they have completed their framework/application and your SAA validates this- then we administer the certification
Allergen Accreditation supports you throughout and will invite your SAA’s to annual events and keep these updated with news and information. They will also help shape the Accreditation process in its continuous development.
The PAAS scheme will form part of the organisations Total Quality Management. There are entry requirements for SAA’s. An initial free consultation or consultations precede any commitment.
When you become an Accredited establishment, you will receive a certificate to show that you comply, along with a vinyl sticker to display on a window, this will let your clients know that you are an "Allergen Accredited" business, you will also have a page for your business certifying your status, we can add a short description of your business, a link to your website and images of your business.
