General experience and duties: As Head of Catering at large University- 37,000 students and 4,000 staff, I am responsible for the provision of catering and hospitality services across the University. We currently operate with over 4.5million turnover and I have 12 outlets, which include restaurants and café bars. I have a team of 60 contracted staff plus additional regular agency staff. I have financial management responsibility with budgets and supplier/contract management. I lead the department ensuring that we deliver our catering to the highest standard whilst achieving our financial targets. I support training and development initiatives for members of staff and like to be at the forefront of any developments. We hold an annual catering staff conference, which allows our staff to come together once a year, attend workshops take part in training, and listen to the key strategic priorities for the department.

The department has a very high standard of Food Safety Management, and have achieved 5 star hygiene rating in all our outlets from the EHO. We have developed a comprehensive in house FSMS which has incorporated Food Allergen Management as part of the daily routine to ensure due diligence of all food produced and served.

I am involved in the development of projects within our area liaising with external consultants and designers who are working on new capital build projects for the University. I am required to provide information and recommendations to develop the catering provision in the new buildings.

Jacqui McPeake SAA and Lynne ACI am qualified with an Advanced Food Hygiene certificate, which is now Level 4 in Food Safety. I have updated my knowledge with CPD and therefore this qualification is still current. I have undertaken the online FSA Food Allergy online training and also attended the “TUCO Food Allergen and Healthier Diets training day”
